The weather is getting cooler . . .

I am a huge fan of fall weather!  The leaves are changing and beautiful, the temperatures lessen a bit, and my cooking patterns change.  Here is one of our fall favorites . . . that goes into winter as well!


White Bean Chicken Chili
1 small chopped onion
4 cloves garlic,chopped
2 -3 TBL olive oil
4 cans great white northern beans, drained
1 - 4 oz. can chopped green chilis
2 c cooked, chopped chicken
2 c chicken broth
2 tsp cumin
1 tsp cayenne pepper (more or less, depending on desired spiciness)
1 tsp oregano
sour cream and shredded cheddar cheese

Saute' onion in olive oil till soft.  Add the garlic and cook for a minute or so.
Add remaining ingredients and then simmer on low for about 30 minutes.
If you'd like the chili a bit thicker, mash the beans just a bit.
Serve with a small dollop of sour cream and a sprinkle of cheese.  
Serve with tortilla chips . . . .YUM!
